Christmas Dinner

December 25, 2012 – 6:48 pm

We had our traditional standing rib roast for Christmas dinner today, with yorkshire pudding, au jus, herbed dinner rolls, shiitake mushrooms, and roasted brussels sprouts. A delicious meal! I hope that you are having a good holiday too!

Corgi Secret Santa

December 25, 2012 – 9:47 am

We participated in the Corgi Secret Santa again this year. Our Secret Santa was Marie Ploof and her corgi, Kipper. They sent us an awesome package with some toys for Emma and a charm bracelet and corgi magnet for me. Emma immediately took to the alligator and has been squeaking it constantly since I took the tags off. 😀 Thanks so much for the thoughtful gifts, Marie!

Waiting to open our gifts

Corgi Christmas Card Exchange

December 24, 2012 – 3:54 pm

We joined the corgi Christmas card exchange this year and we’ve got tons of cards from all over the world! This has been so much fun. 😀 Thank you everyone!

Some of what we’ve been eating…

December 23, 2012 – 12:20 pm

I’ve been such a bad blogger. Here’s some of what we’ve been eating between Thanksgiving and now. Lots o’ trusty standbys, not much in the way of new things, but I’m looking forward to experimenting some with the time off for Christmas!

Tonkatsu with roasted asparagus and tomatoes

Smoked Sausage and Summer Squash (using the low fat chicken sausage)

Cornflake Chicken with roasted cauliflower and acorn squash

Sauteed Wild Mushrooms (chanterelles and shiitakes with a bit of butter and fresh thyme)

Herb Rubbed Pork Tenderloin with Cherry Habanero Sauce

White Wine Braised Chicken Thighs with Brussels Sprouts

Beer Roasted Chicken

Turkey Mushroom Penne

Lemon Garlic Chicken Thighs

Rosemary Garlic Rack of Lamb

Steel Cut Oatmeal

Roasted Turkey Breast – rubbed with salt, pepper, sage, rosemary, thyme, and canola oil

Christmas Treats

December 22, 2012 – 9:25 pm

I made a batch of fudge and a batch of cranberry white chocolate oatmeal cookies this evening. I’ll be giving most of them away to neighbors and friends tomorrow, but we of course had to quality test too. 😉

Santa Emma

December 17, 2012 – 8:08 pm

Santa Emma has many Christmas cards all ready to send!

Happy Holidays!

December 13, 2012 – 8:12 pm

I wish a happy holiday season to all my readers – a belated Happy Hanukkah, an early Blessed Yule, a quite early Merry Christmas, a non-panicked Mayan end of the great cycle 😛 . Whatever you celebrate this season, I hope that you are able to enjoy some time with loved ones and recharge for a new year. There will be more posts on our Christmas treats, and a post or two about what we’ve been up to and eating in the past few weeks (bad blogger, Cassie!), but in the meantime, here is this year’s Christmas card that I’m hoping to actually get mailed out in the next few days. Wish me luck!
