First grilled steaks of the season

Sunday, April 11th, 2010

We warmed up the grill for the first time this year, and celebrated with some nice little steaks, baked potatoes, and green salad. A nice meal to enjoy the warmer weather!

Beef and Bean Burritos

Monday, April 5th, 2010

Another re-post from early in the blog with a new and improved picture. These appear in our dinner menu at least once every couple weeks - they're just so easy and flavorful, not to mention fast. All great qualities for a weeknight meal! Beef and Bean Burritos Serves 4 1 lb ...

Italian Smoked Sausage and Vegetable Skillet

Sunday, April 4th, 2010

This is a variation on my chicken bruschetta, just using a pound of smoked sausage instead of chicken. I do prefer the chicken version, but this is a nice change of pace. I made this for lunch today, with leftovers to take to work for lunches. Italian Smoked Sausage ...

Chicken Noodle Soup

Wednesday, March 31st, 2010

Chicken noodle soup tonight - I had a dentist appointment after work, so an easy to chew dinner was in order. Today I browned the butter a bit for more flavor, used leftover rotisserie chicken, used fiori instead of egg noodles, and used some fresh thyme since I had ...

Chicken Cacciatore with Sautéed Mushrooms and Zucchini

Friday, March 19th, 2010

This excellent recipe is inspired by Fine Cooking's Soups and Stews special issue (also available online). I modified it for our taste and what I had around: boneless chicken, reducing the oil, omitting the onion and adding some onion powder for some of the flavor, increasing the quantities of ...

Corned Beef and Cabbage Hash

Friday, March 19th, 2010

A quick and easy breakfast that I packed up to take to work with me today. I just melted half a tablespoon of butter in a large skillet, used kitchen shears to cut my last wedge of cabbage and 2 slices of corned beef into little pieces, added them ...

Happy Saint Patrick’s Day!

Wednesday, March 17th, 2010

I usually make my corned beef and veggies in the crockpot, but today I did them on the stovetop, since I wouldn't be home to put in the veggies at the halfway point. It turned out just as good. I also baked my soda bread, which was good as always. I ...

Chicken Mushroom and Basil Calzones

Monday, March 15th, 2010

Yet another calzone iteration. This one was just my previous chicken and basil calzones with an 8 oz package of crimini mushrooms added after I browned the chicken. These are so easy and tasty, and the mushrooms were a great way to add some veggies.

Navajo Tacos with Warm Corn and Black Bean Salsa

Saturday, March 13th, 2010

This was a somewhat successful experiment from crazy ideas in my head. I tried to keep close to ingredients that the Navajo would have had, in some form :-P Not very flavorful this first try, but next time I can up the spices. I ...

Rosemary Garlic Oven Fries

Wednesday, February 24th, 2010

These are a decent side dish - easy and flavorful. The inspiration for these came from Shaun describing "smashfries" from a place called Smashburger in Grand Junction. Mine are a sort of thin steak fry, and I've gone the oven route for ease and saving of some calories ...
