Italian Stuffed Zucchini
February 3, 2011 – 6:39 pmLast night I made my Italian stuffed zucchini. This time I added 8 oz of chopped crimini mushrooms. I liked it pretty well, but I need to find a way to make it a little more tomato-y. The added tablespoon of tomato paste and a few diced tomatoes just wasn’t quite enough.
