40 Garlic Clove Chicken
July 22, 2010 – 6:54 pmThis is a first take on the famous 40 garlic clove chicken recipes out there. I started with Alton Brown’s recipe, which was okay, but I was wishing for more garlic flavor in the chicken. Next time, I think I’ll add the step of marinating with a garlic paste for 24 hours, as with the lemon garlic chicken we had a little while ago. I might add some fresh oregano as well. I used only chicken thighs, rather than a whole cut up chicken, which made it easier to cook evenly, and as a bonus with the smaller pieces I only needed to bake them for about 30 minutes after browning. I also used only about 20 cloves of garlic since I had just 4 chicken thighs for the two of us. This was a decent launching point, and I look forward to further experiments.
