Roasted Veggies and Chicken

Dinner tonight was simple. I preheated the oven to 425 degrees, then sprinkled chicken thighs with salt, pepper, thyme, and cayenne and popped them in the oven. I cut up about 1.5 lbs of romanesco summer squash, 1 lb each of broccoli, cauliflower, and yukon gold potatoes, and spread all the veggies out on baking sheets. I then lightly drizzled with olive oil, sprinkled with kosher salt and black pepper, and popped them in the oven too. After an hour of cooking the chicken, the veggies were also done perfectly, and dinner was done!

Corgi Picnic

Emma and I spent a very enjoyable several hours this past Saturday at a Corgi Picnic hosted by another local corgi owner. There was great attendance, much fun, and some money raised for CorgiAid as well. All in all a great time!

For dinner tonight, I made my stuffed summer squash with some fun and delicious eight ball zucchini from my CSA box. For the side, I made tomato and cucumber salad. This was a great summer meal!

Butter Braised Cabbage

This recipe for butter braised cabbage was a quick and easy, but not very good side dish. All I could taste was the butter; it just overwhelmed the cabbage. I like butter, but not that much. Shaun wasn’t a fan either. We won’t be repeating this one.

40 Garlic Clove Chicken

This is a first take on the famous 40 garlic clove chicken recipes out there. I started with Alton Brown’s recipe, which was okay, but I was wishing for more garlic flavor in the chicken. Next time, I think I’ll add the step of marinating with a garlic paste for 24 hours, as with the lemon garlic chicken we had a little while ago. I might add some fresh oregano as well. I used only chicken thighs, rather than a whole cut up chicken, which made it easier to cook evenly, and as a bonus with the smaller pieces I only needed to bake them for about 30 minutes after browning. I also used only about 20 cloves of garlic since I had just 4 chicken thighs for the two of us. This was a decent launching point, and I look forward to further experiments.

They were short on butter this week, but got in a small harvest of gorgeous little yellow cherry tomatoes that they handed out as replacements this week, and I’ll get the butter next week 🙂 The fruit started up this week too. I’ve already had a little plum, peach, and cherry, and I think these will probably just be devoured over the next couple days with no additional preparations. Yum!

Emma on the Couch Arm

The phone rang this afternoon, and Emma hopped up on the couch arm to point it out to me. After I hung up, instead of hopping off like she often does, Emma instead stretched out on the couch arm. I managed to get a couple shots before she hopped down. 🙂
