Yet another take-off from an Everyday Food: Great Food Fast recipe. This was a very tasty take on chicken with some traditional Tuscan flavors. The fresh lemon juice lent a nice bright touch. I only had time to marinate it for about 30 minutes tonight, but longer ...

This is a quick and easy side that I made to go along with some more of the leftover pork loin, which I just sliced thinly and placed on top of the saute before covering the skillet to warm through.

This is a take on my bruschetta chicken. I did not have any zucchini on hand, but I was inspired to add some olives. It turned out exceptionally well, and we'll definitely be making this again! I served this with a simple romaine lettuce salad and ...

Yet another calzone iteration. This one was just my previous chicken and basil calzones with an 8 oz package of crimini mushrooms added after I browned the chicken. These are so easy and tasty, and the mushrooms were a great way to add some veggies.

This is a very easy and cheap dinner, easily scaled for however many you need to serve. I have the recipe for one below, as tonight Shaun and I were just foraging thanks to a headache I had earlier that precluded any major cooking that might involve such things ...

This is another iteration on calzones. This time I cut up some Isernio's Chicken Italian Sausage links into rounds for the protein. These were great, and we both thought that with a can of diced tomatoes instead of the tomato sauce, this would be great on pasta as ...
