This recipe is a wonderful veggie main course, rich in flavor, hearty enough to be dinner, and very healthy. I've been meaning to make a ratatouille like this for years (yes, ever since that Ratatouille came out), but I finally got around to it tonight. A Mandoline Slicer ...

This is a quick meal for a weeknight that I came up with on the fly. It turned out pretty well and I'm happy to share it here. I think brussels sprouts might work better as the vegetable, but the asparagus was quite alright too.

Happy Valentine's Day! Or as a co-worker said, Happy 50%-Off-Candy Eve ;-)
Tonight's dinner was my nice and fast turkey meatballs, made a bit less fast due to the sudden inexplicable flight of whimsy that caused me to shape them into hearts. It was ...

This is an iteration of my chicken cacciatore. It has a bit less chicken and even more veggies, making it even more weight loss friendly. We really enjoy this meal - a big bowl of tasty Italian stew, warming and satisfying for a chilly January evening.

These outstanding burgers are inspired by one at Red Robin. The combination of flavors works very well together, though my version was not as good as the original. The subtle sweetness of the bourbon permeates the beef, caramelized onions, and barbecue sauce. The brioche roll keeps things ...

I love reuben sandwiches - the combination of salty, crunchy, melty goodness just makes me happy. :-) This is my version, an easy meal for an evening when I'm on my own for dinner. I served this with a couple dill pickle spears.

This recipe comes from my mother - it's a healthier take on broccoli cheddar soup. This version doesn't have any cream or milk, just a flavorful broth, lots of broccoli, and a little bit of cheese, which could be eliminated if you wanted it to be entirely dairy-free.

This is me winging it with my meatball recipe while feeling like soup on this foggy evening. Stracciatella is a classic Italian soup, traditionally made with just chicken broth, eggs, and some sort of green (spinach, arugula or kale). I added my meatballs and a little pasta to ...
