This is my take on lasagna. It's somewhat lighter, but still packed with flavor - tons of veggies, chicken Italian sausage, low fat ricotta, Parmigiano-Reggiano, mozzarella, smoked provolone, and delicious homemade tomato sauce. I froze most of this for lunches over the next few weeks, but couldn't resist ...
